Farmer miller baker and winemaker. The flavours of yesteryear, with stone-ground flours from ancient varieties of wheat, hand-made breads baked over a wood fire and natural wines.
Thierry Seren is a farmer, miller, baker and winemaker in Saint-Julien les Martigues.
All the breads and wines he offers are organically produced (certification body FR-BIO-15).
The wheat used to make the flours is mostly, and in some cases totally, local (old varieties of wheat) and is grown locally, 5 km from the point of sale (Pays Martégal).
The flours are "millstone" flours, i.e. produced by a stone mill.
All the work is done by hand and the bread is baked in a wood-fired oven.
All the wines are "natural" : White, red and orange (white macerated like a red wine).
