Thierry Seren is Paysan-Boulanger in Saint-Julien les Martigues.

All the breads that he proposes come from organic farming (certification body FR-BIO-15).
The wheats used to make the flours are for the most part totally wholesome (former varieties of wheats) and are grown locally 5 km from their point of sale Native of Martigues).
The flours are called "millstones", that is to say produced by a stone grinder mill. All the shaping is done by hand and cooking is done in a wood oven.
