Farmer miller baker and winemaker. The flavours of yesteryear, with stone-ground flours from ancient varieties of wheat, hand-made breads baked over a wood fire and natural wines.

Thierry Seren is a Farmer-Miller-Baker and Winemaker in Saint-Julien les Martigues.

All the breads and wines he offers come from organic farming (certification body FR-BIO-15).
The wheat used to make the flours are mostly, or even totally for some, population wheats (old varieties of wheat) and are grown locally 5 km from their point of sale (Pays Martégal)
The flours are called "millstone", that is to say produced by a stone mill.
All the shaping is done by hand and the cooking is done in a wood-fired oven.
All the wines are called "natural": white, red and orange (white macerated like a red wine).
